I am really coming to terms with the fact that I am going to do this. I get countdown emails from the 21 Day Vegan program because they start on Monday.  My husband just bought a whole lot of oatmeal, apple cider vinegar, olive oil, pita bread, whole wheat tortillas, and a few other items to get me going the first week. Money has been spent. This is happening.

The kids are being supportive, but they apparently draw the line at almond milk.  I bet I can get them on board. We now have this cool thing that we do for dessert and to put on oatmeal. I put frozen fruit in the food processor which chops it up in to little pebbles. It actually makes a wonderful dessert, and no one needed sugar on their oatmeal when we did the mango pieces.

Everyone went to church without me, so I just sorta sat around. I had my tea and supplements as usual, enjoyed my oatmeal, and just sat.

I have studying to do, but I am still in this really strange place.  I know that there are some steps I need to take to get where I want to be, but I am just at the bottom of a huge staircase right now... forever getting ready, but not going anywhere.

I have to get a scale next week sometime, but I also have to pay for gymnastics and tennis.  I'll probably get it at the end of the week. I don't need to be weighing myself every day anyway.  My goal for this week is to get to the gym 5 out of 7 days. Believe it or not, that's not too hard. I have the time, but the desire is something else entirely. I do, however, have the desire to live, so I think that will get me there. I can commit to one hour every day, no problem. Instagram stories is a good way for me to track what I am doing and be motivated to keep going. I'll be posting my food, my gym visits, and my progress.

From what I understand, people who follow the diet to the letter improve their health and lose at least 20 pounds in less than a month.  I have quite a bit to lose, so we will see if it ends up to be more of less.

The kids have gone out to play tennis, and they keep saying that I need to come with them. I probably would have today, but I got a tetanus shot on Friday that is kicking my butt. Every joint hurts. Each letter that I type hurts. But I said I would write each day and get this thing done, so here I am.  This will be short because, like it or not, I have studying to do, lesson plans for next week, and I owe myself a really good nap.

I did go over my grocery list and recipes for the week, and sent my list to my husband. His help is really going to be the key here. I'm not the food shopper in the house. So here's what I need to go get...

portobello mushrooms

vegetable juice

reduced-sodium soy sauce

yellow or red onion

vegetable broth

dark greens for salad

red or green bell pepper

frozen artichoke hearts

tomato juice

red lentils

ground coriander

rice cakes

frozen corn

fresh cilantro

green onions

fat-free or low-fat vegan mayonnaise

stone-ground mustard

romaine lettuce leaves

vegetarian worcestershire sauce

thai chili paste

bok choy

semi-sweet vegan chocolate chips

low-fat silken tofu

small package fresh strawberries

black beans

There's more to the recipes, but they call for things like curry, and you know I got that! I'll post pictures of how it is going in my daily posts, so look out for those. Here's to a great week!

I'll be keeping up my Instastories, so you can follow along with me there. My handle is @socamom. I am following the 21 day vegan kickstart plan by Dr. Barnard at the recommendation of my physician.

If you missed it, check out my post, Day one: Occupied, to see how I got here!
